It’s not every day you have a birthday, even if you are the Queen of England. But today is in fact Queen Elizabeth II’s 94th birthday, and though this year her birthday is being observed with restraint and silence today, in honor of Britain and the rest of the world’s current struggles, she will still be enjoying a classic sweet treat: chocolate cupcakes from the Royal Pastry Chefs. Comfort food: even the royals are doing it!
Birthday or no, it’s always chocolate cupcake time in our neck of the woods. Luckily, the royal pastry chefs have shared their recipe on Instagram.
Surprisingly, there’s nothing ultra-fancy, posh, or pricey in the recipe. It’s your standard chocolate sponge cake recipe, with one twist: white chocolate chips are folded into the batter before baking.
Once out of the oven, the cakes can be frosted with elaborate royal icing designs, or with a simple buttercream frosting made with butter, powdered sugar, and melted dark chocolate.
This isn’t the only royal recipe we’ve learned this week. The Queen’s former personal chef, Darren McGrady, also shared the Queen’s favorite scone recipe on his YouTube channel this week.
Now, British scones are a little different than American scones – they resemble round American biscuits more than the massive craggy triangular scones you’ll find at bakeries here. The Queen’s faves are firm on the outside, tender and fluffy inside, and the perfect vehicle for clotted cream and jam after tea time. And for those who are dying to know, the Queen always adds jam before the clotted cream.
It seems like everyone’s been baking up a storm these days, and though we’re all about the sourdough, maybe this week it’s time to switch things up in honor of Her Majesty and try making a batch of chocolate cupcakes and scones instead.
