The Gaines family does pretty much everything together, from welcoming newborn baby goats to their farm to staging houses that Joanna and Chip renovated on the dearly departed Fixer Upper. But one of their family traditions is slightly more unconventional — they celebrate Valentine’s Day together. Instead of having it be a romantic holiday for just the parents of the family, the whole crew works together. The kids menu plan and prep dinner, Chip is in charge of the grill, and Joanna takes the reigns for dessert. This year, she made a decadent French Silk Pie, one of the recipes from her upcoming cookbook Magnolia Table Volume 2, and while everything about it sounds delicious, it’s the chocolate cookie crust that really has us drooling.
For those not in the know, French Silk Pie is basically a chocolate cream pie. This one calls for a homemade chocolate filling, which is a lot more decadent and delicious than using boxed chocolate pudding mix. The filling is whipped and folded with whipped cream, so it has a light, airy texture, kind of like a chocolate mousse. To finish, the pie is topped with a cloud of whipped cream and chocolate shavings, and though it’s often served in a traditional butter pie crust, Joanna Gaines opted to make hers even more over-the-top delicious by using a chocolate cookie crust.
To make the crust, you’ll need to get your hands on some chocolate wafer cookies. They can be kind of pricey but trust us when we say, the intense cocoa flavor they bring to recipes make them totally worth the splurge.
The cookies are put in the food processor with sugar and butter, then pressed into a pie pan and pre-baked. Once the crust is cool, you can pour in the chocolate pie filling.
