Pork, Nuoc Cham, Pineapple, Cashew and Pepper Salad

Put some pork on your fork with this sensational salad.


2-3 Pork Chops

1 ½ cup Diced fresh Pineapple

1 small Cucumber, seeded, diced

1 small Red Onion, finely sliced

½ Red Capsicum, seeded, fine sliced

2 Shallots, sliced diagonally

½ cup Cashews, roasted

2 tsp Dried chilli (or use Gourmet Garden Lightly Dried Chilli)

1/2 bunch Basil (or 1 tbsp Gourmet Garden Lightly Dried Basil)

1 Gourmet Garden Nuoc Cham Finishing Drizzle


1 tbsp Rice Wine Vinegar

1 Lime, zest & juice

1 tsp Crushed Garlic (or Gourmet Garden Garlic paste)

2 tbsp Peanut Oil

1 tsp Fish Sauce

1 tbsp Palm Sugar, finely chopped or 2 tsp brown sugar


Heat BBQ or pan on high heat. Oil pork and cook for 2-3 minutes each side, or to your liking. Remove from pan and rest.

To prepare salad, combine pineapple, cucumber, capsicum, chilli, shallots, nuts & basil in a bowl.

To prepare dressing, combine all ingredients in a lidded jar, seal, and shake well.

To serve simply pour dressing over salad, and toss gently to combine. Once pork is rested, a plate with salad. To finish simply Shake, Tear and Drizzle Gourmet Garden Nuoc Cham Finishing Drizzle over pork.
