LeAnn Rimes Eats Leftovers For Lunch Basically Every Day

ICYMI, multi-platinum country artist LeAnn Rimes is kiiind of a major deal. Yeah, not only was she was the youngest person *ever* to win a Grammy (she’s celebrating a whopping 25 years as a recording artist next year), but she’s also been decorated with pretty much every music award and accolade imaginable.

All of that winning requires a healthy, energizing diet—and you’d better believe that LeAnn (who’s soon releasing an album of meditations and launching a wellness podcast) is fueling her creativity with the good stuff.

These days, LeAnn’s food philosophy is all about nourishment—and there’s more to it than just getting her vitamins in. “Nourishment usually looks like high-quality, healthy, whole foods, but sometimes nourishment is the cake, the chips, the pizza, and the mac and cheese,” LeAnn tells Women’s Health. “It’s all a balance.” *slow claps*

Here’s exactly what LeAnn Rimes eats in a day to keep her body, mind, and spirit strong, healthy, and ready to keep making musical history.

Breakfast

“I love food, so I’m pretty hungry when I wake up,” LeAnn says. She usually starts her morning by making herself Kimberly Snyder’s Glowing Green Smoothie, which includes tons of chopped spinach, lettuce, celery, apple, pear, banana, lemon juice, and more. (Talk about getting in all your greens, you guys.)

And, yes, it’s delicious. “My body actually craves it!” says LeAnn. Then, after breakfast, she gets in a nice little sweat sesh.

Post-Workout Snack

LeAnn enjoys snacking throughout the day, and usually munches on a Sakara Life Energy Bar or some carrots and hummus after her workout.

She also keeps her taste buds entertained with teas. “Now that it’s getting warmer outside, I’ve also been brewing Leaves and Flowers Van Van Tea and putting it on ice,” she explains. “It tastes exactly like Fruit Loops, so it’s refreshing and kinda fun.”

Lunch

Recently, LeAnn has been cooking almost all of her meals at home. That means her lunch consists of the same thing pretty much every day: leftovers from the night before.

“Our leftovers range from mushroom and poblano tacos in almond flour tortillas, to smoky white bean and greens soup, to a delicious chicken and veggie stir fry,” she explains. (Anyone else’s mouth watering? Just waiting for my lunch date invite over here…)

Snacks

You’d better believe LeAnn keeps up her snacking game throughout the day. “My afternoon snack is something similar to my morning one,” she says. “Or, I may have an apple or a small bag of Bada Beans.” (PSA: She also tries to drink *tons* of water throughout the day.)

LeAnn also loves Coco Bakes’ Grain-Free Cinnamon Sugar Buns. “They’re not as sugary sweet as they sound at all, but they are delicious!” she says. “I put a little ricotta cheese and strawberries on top and eat a half of one as a snack, or even at breakfast if I want to switch it up.” YUM.

Dinner

In addition to all the delish meals that end up as lunch leftovers the next day, LeAnn also loves herself a good bowl. She often uses cauliflower it as a base and then adds protein like marinated and baked tempeh or grilled chicken. After that, she adds tons of greens and veggies.

“My hubby and I usually enjoy a glass of wine with dinner too,” she says. (Remember, balance.)

Dessert

Just when you thought you couldn’t love her any more: “I am a bit of an after-dinner snacker,” LeAnn says. “Barnana Dark Chocolate Banana Bites are my favorite treat, and I love an apple with a little peanut butter.” Though LeAnn says she doesn’t often have a sweet tooth, these post-dinner snacks do the trick when it does kick in.
