Basil seed Pudding with Mango and passion fruit

Ingredients for 2 servings

For the Basil Pudding

  • 70 g Basil seeds
  • ½ A Mango into 8-mm cubes
  • 2 passion fruit – hollow out
  • 1 tablespoon coarsely chopped macadamia nuts in a fat-free pan roasting

Liquid ingredients and spices

  • 500 ml coconut milk
  • 150 g of soy yogurt
  • 3 TABLESPOONS of Xylitol (healthy sugar substitute)
  • 1 TBSP Yaconsirup
  • ¼ TSP vanilla powder

Preparation

Preparation time about 15 minutes

The Basil seeds with the coconut milk, vanilla, Yacon, and the Xylitol in a saucepan and let boil once. Then, Stirring constantly, 2 Min. simmer!

Then remove from the heat, allow to cool for 2 hours in a cool place. Then the soy yogurt under the cold mass stir.

The Pudding into two Dessert glasses or two bowls. Then the Mango with the passion fruit mix and the Basil pudding. With the toasted macadamia enjoy nuts sprinkled.
