9 Delicious Dishes from Vinny Guadagnino You Won’t Believe Are Keto

Going keto isn’t easy even for the most disciplined eaters. The low-carb, high-fat diet championed by the likes of Jersey Shore’s resident “Keto Guido” Vinny Guadagnino puts your body in fat-burning mode, known as ketosis, to help you drop weight. But that doesn’t come without sacrifice, like skipping some basic and beloved food items: sandwiches, pasta, and cookies. And who wants to live in a world without cookies?

But as Vinny can tell you, there are workarounds. The Staten Island native, who’s in the new season of the MTV show’s Family Vacation reboot (airing Thursdays), can’t cut out Italian staples entirely. He impressively manages to chow down on bread and pizza while sticking to his strict keto diet, thanks to low-carb recipes and alternative food products. And he loves to show off his indulgences on Instagram. Here are nine times it looked like Vinny cheated on keto, but he was actually in the clear.

Recently I was super hungry late night in Toronto and was craving a burger to get delivered to my hotel . I checked out this place @theburgerspriest that was still open and was going to just do my usual bun-less burger but was shocked and pleasantly surprised to see a “Keto bun” @ketobuns option.. if I didn’t love Canada enough , now they have Keto buns! Not sure how they make it ( i assume almond flour, nuts, and seeds and shit like that) And it was pretty cool to have this bun for the texture and old school way to eat a burger , but half way in I just ate it without the bun. I think that’s just becoming my preferred way of eating a burger now ! But respect for starting to get this way of life on to menus ! #ketoguido

By now we’re all familiar with the bun-less burger, often served in a lettuce wrap. Vinny frequently goes bun-free, but here he ordered a burger with a Keto Buns roll, which is keto-friendly, gluten-free, and grain-free. That bacon looks awfully delicious, too.

One nice thing about keto is the ability to remain full by gorging on fatty meats. For one lunch, Vinny threw cured meat, cheese, and arugula into what looks like an un-keto wrap. But no worries, that keto-friendly wrap is made of coconut.

Ok so pizza is my favorite thing in the world and I haven’t had it in 3 weeks. Because I’ve been kickin my ass and I’m not too far off from my goal, I wanted a “semi” cheat meal pizza for my sanity . So I came to moms to make this recipe we have been working on for a while for a grain free, low carb pizza. One is moms sauce and basil, and the other is topped with ricotta, prosciutto , and black truffle oil. The crust is basically made out of mozzarella, cream cheese, almond flour, arrow root flour and some seasonings ( I’m not into the cauliflower crusts). Because most of this pizza is made out of cheese (and cheese does turn to sugar) it is still a TREAT. But, It feels a lot better than having a whole bunch of flour and gluten sitting in your stomach. Like I’ve been saying, I usually would eat regular pizza on a Sunday but because I’m really trying to stay focused , this is better pizza option for me and is more fatty than It is sugary. I’m not listing the recipe on here but you could find a lot of these “keto” “paleo” pizza things online, and with your support and as the page grows I may be able to release a lot of recipes of my own .

When Vinny goes back to see his Italian family in Staten Island, it’s all about pizza. For this “semi-cheat” meal, Vinny and his mom cobbled together a keto-friendly recipe for pizza with a low-carb, grain-free crust mostly made out of cheese. Smart move.

Vinny most recently teased his followers with a plate of piping-hot empanadas, which are usually very un-keto. But these are made with a low-carb dough and stuffed with seasoned grass-fed ground beef. Damn, if this is keto, it’s suddenly looking tempting.
