With holiday party season ramping up and so many of my friends trying to eat a more plant-centric diet, I wanted to create a simple and delicious vegan dessert that featured my favorite salty-sweet duo: peanut butter and chocolate.
Oats and coconut chips join forces with melted vegan chocolate, and Country Crock® Plant Butter with Olive Oil to form the crust. (Country Crock’s new product is an amazing sub to dairy butter, especially when melted.) Then, I created the filling with peanut butter, a bit more Plant Butter, and maple syrup. The finishing touch? A sprinkle of flaky sea salt, which gives the dish a fancy, sophisticated vibe with basically zero effort. These rich and decadent bites had all of my vegan (and non-vegan) friends in awe.
