This spicy Mediterranean cauliflower recipe is the perfect way to eat more veg

Looking for a spicy, healthy and anti-inflammatory meal to end your day that you can also pack and have for lunch the next day? Then this Oddbox recipe may be right up your alley. 

If you’ve vowed to eat more veg this year, then this one’s for you. A whole roasted cauliflower is a perfect canvas to add a load of delicious flavour – and we’re not just talking about cheese sauce. Fresh spices, loaded with anti-inflammatory goodness, are used to dress the fibre-packed vegetable for a veggie main or to spice up your usual Sunday roast.  

Then there are the benefits of the cauli itself. Packed with sulforaphane, a compound linked to improving heart health and digestion. Plus, thanks to its many antioxidants and big dose of vitamin C, it will support post-workout recovery while supporting your immune system. 

If you don’t get through the whole head, chop the leftovers and use them to pad out fried rice the next day, or blend the cauliflower for a spicy puree. 

Ingredients

1 cauliflower

3 tbsp rose harissa pesto

40 ml olive oil

2 tbsp maple syrup

1 tbsp ground cumin

1 tbsp ground turmeric

Salt and pepper

Method

In a bowl, mix together the harissa pesto, olive oil, maple syrup, ground cumin and turmeric. Season with a generous pinch of both salt and pepper.

Place the cauliflower head in a baking dish and pour over the harissa mixture. 

Pour 50 ml of water at the bottom of the dish. This will help cook the cauliflower by creating a steam, as well as preventing the harissa mixture from burning.

Bake for 40-45 minutes, until golden and tender. Poke with a knife; it should easily pierce the core. If you prefer a softer cauliflower, then roast for longer. If you like a crunchier cauliflower roast for less time.

Remove from the oven, and place the cauliflower on a chopping board to rest. 

Place the cauliflower leaves in the baking dish, toss to coat with the harissa sauce and bake for 10 minutes, until wilted and tender.

Serve the cauliflower head alongside the cauliflower leaves.
